We are lucky enough to have a Honest Burger just down the road from our work. Yes the burgers are awesome but, what we're huge fans of are the rosemary chips.
Ahh they're so good. Sadly my bank balance stops me from going every week to indulge and so I attempted to make up some which could easily be rustled up at home. But with a twist. We're a big fan of sweet potatoes so I swapped ordinary potatoes for 4 of those, and just because we're massive cheese fans, threw in a handful or two of Parmesan. The result was a success!
To make these at home all you need is
- 4 medium sized sweet potatoes
- 60g Parmesan
- 3 tbsp olive oil
- Large pinch of salt
- 4-5 sprigs of rosemary, finely chopped
Step 1
Preheat your oven to 220C. Cut your potatoes into chips or wedges depending on your preference. Try to keep them roughly the same size so they cook evenly. Place into a bowl and pour in your olive oil. Give the potatoes a good mix in the oil.
Step 2
Grate your Parmesan and add 50g to the bowl with the potatoes. Finely chops up your rosemary and also add to the bowl. Lastly add a large pinch of salt and then mix all of the ingredients together to ensure the potatoes get coated in the cheese and rosemary.
Step 3
Place some tin foil in a large baking tray and place a wire rack on top. Layer your potatoes on the wire rack and sprinkle over the remaining Parmesan. Bake for 20-25 minutes until they're soft in the middle and crispy on the outside. Serve with sour cream, mayo or another of your favorite condiment!
